Tobasiche agave is a wild variety of the Karwinskii
species, characterized by its cylindrical and elongated
shape, with leaves that open at the top. Tobasiche aga-
ve grows in the arid, rocky regions of Oaxaca, where
it takes between 12 and 15 years to mature. Using the
capon technique on those wild growth agaves gives it
a strong and complex character.
Character: Showcasing classic Tobasiche notes: intense
herbal, peanuts, pepper, and citrus. Fruity sweetness
complexity at the beginning transitions to a distincti-
ve earthy-savory and lactic profile. Mouthful and coa-
ting, tannic, astringent.
