Tobalá is a distinguished agave, taking 8–12 years to

send up its flowering stalk, especially when growing

among rocky outcrops. It has broad leaves with red-

dish spines, and its scientific name translates to „aga-

ve of the drinkers”, while its local name means „shade

agave.” Tobalá mezcal offering sweet aromatic notes

and intense roasted agave aromas. Reflecting both, its

complex growth environment and artisanal produc-

tion.

 

Character: Aromatic and fruit-forward with stone

fruit compote, orchard blossoms, and dry mineral

fragrances on the nose. The palate delivers lush sweet-

ness and floral aromatics, accompanied by notable al-

cohol warmth and underlying minerality. The finish

extends beautifully with layered fruit, flowers, and

cocoa hints anchored by persistent rocky minerality.

A spirited yet elegant expression with complexity and

remarkable length, highly recognized by mezcal en-

thusiasts.
