Papalometl, whose name comes from Nahuatl -
papalotl meaning „butterfly“ and metl meaning „aga-
ve“, is named for its broad, butterfly-wing-like leaves.
It grows along the Sierra Madre del Sur, from Guerrero
to eastern Oaxaca. The plant reaches up to 50 cm in
diameter, with a flowering stalk that can grow up to
3.5 meters. It‘s known for its mineral and lactic aro-
mas, with flavors of roasted agave, complemented by
sweet and fruity notes. This agave takes 8–10 years
to mature, yielding a mezcal with both freshness and
complexity.
Character: Distinctively herbal and aromatic with
pronounced botanical complexity showcasing the wild
maguey‘s terroir. The nose presents orchard fruit, flo-
rals, and medicinal pine-eucalyptus notes, while the
palate balances honeyed sweetness with tea-like tan-
nins, lavender-chamomile florals, and gentle resinous
spice. Light bitterness and anise-licorice accents add
structure to the delicate profile. An elegant expression
of wild Papalometl agave with refined vegetal charac-
ter and subtle depth.
