Bicuishe is a micro-endemic agave that matures in
the Oaxacan valleys between 8–15 years. Smaller than
its Cuishe and Madrecuishe relatives, it grows like a
compact „maguey tree,” developing the mineral-rich
character for which this species is known.
An excellent match for scallops or lightly smoked oys-
ters grilled in their shell.
Character: It opens with aromas of damp forest, hier-
babuena, green and black tea, sweet figs, quince, wet
earth, and a touch of dust, carrying a gentle sweet-
bitter personality. On the palate, it shows high acidity
with low astringency, along with subtle marine notes
that reveal its complexity without overwhelming. The
long, pleasant finish lingers with vegetal and humid
forest, roasted pineapple, ginger and an unique ocea-
nic minerality.
