A rare variety of agave, Belató, is an unclassified sub-
species related to Agave americana. With huge, long
leaves that curve gently upward like sabers, or anot-
her subvariety, Pulque Chino, and lumber (maguey of
fire), characterized by its yellow-orange mature lea-
ves. It reaches maturity after 18 years. Endemic to the
southern mountains of Miahuatlán, Cuish Mezcaleros
have only managed to grow and distillate.
Character: Elegantly floral and herbaceous with stone
fruit and berry aromatics that evolve from a reser-
ved opening. The palate showcases bitter orchard fru-
it with a creamy texture and gentle tartness, layered
with warming baking spices. The long finish balances
sweetness with baking spices and a persistent mineral
and saline backbone. A unique and complex expres-
sion that rewards the senses at degustation.
Availability: Limited availability. This batch, their se-
cond, yielded just 100 liters. A true piece of agave his-
tory and a snapshot of Oaxaca’s heritage not to be lost
or forgotten.
