The Espadín agave used by Agua del Sol is cultivated to
ensure a reliable and sustainable source, a key aspect
of the brand’s mission is to support local communi-
ties. This agave is cultivated, but the specific terroir
and the individual batch production heavily influen-
ce its characteristics and the quality of the spirit. The
Espadín agave plants are growing for 7 years before
reaching maturity. To harvest the Espadín Agave, the
capón technique is beeing used. This involves cutting
off the agave flower (Quiote) to accumulate sugars and
aromas.
Character: Classic Santiago Matatlán expression show-
casing traditional sabino wood fermentation with
prominent native yeast character. The nose presents
tropical ripeness and cereal notes, alongside minera-
lity and light smoke. The palate balances sweetness,
citrus brightness, maintaining a gentle bitterness and
earthy depth – smoke present but not dominating.
A well-rounded Espadín with traditional production
integrity and character, ideal for both neat sipping
and mixing in cocktails.
