This agave belongs to the Karwinskii family and ranks
among the largest varieties, endemic to the Oaxaca region
and the Central Valleys. Called „mother agave“ for its ab-
ility to cross-pollinate via bats, producing seeds that yield
diverse other agave varieties, making it a biodiversity cor-
nerstone. Characterized by tall, cylindrical growth with
leaves extending along its trunk length, naturally shed-
ding lower foliage with age. The dense, fibrous piña, with
exceptionally low water content, produces mezcal with
a signature high minerality and herbaceous complexity.
These Madrecuishe plants were cultivated for 8-10 years
using the capón technique, enhancing their character pro-
file.
Character: Full-bodied classic expression of Madrecuishe,
showcasing the mineral intensity and herbaceous com-
plexity. Bright orchard fruit aromatics meld with green
vegetal notes, baking spices, and nutty depth. The pala-
te balances creamy vanilla sweetness with pronounced
herbaceousness, and minerality. Textured and full-bodied
with elegant grassiness, richness, and distinctive earthy-
floral character, offering layered complexity.
