Coyote is endemic to Oaxaca and Puebla, primarily
found in the Central Valleys of Oaxaca and the Tehua-
cán Valley. It grows on flat or gently sloped limesto-
ne terrain at elevations of 1,550–1,900 meters. Known
for its tall, broad-based leaves that can reach up to
two meters, Coyote displays a pale, almost silvery co-
lor, with small marginal spines and large branches,
flowers, and fruit capsules. Its strong fibers (ixtle) are
traditionally used for rope-making, while the dried
quiote serves in the construction of roofs, walls, and
fences. Known in Zapotec as „Lyobaa“, meaning „place
of rest,” this agave carries a deep cultural and ecolo-
gical significance, reflected in the complex, expressive
character of the mezcal it produces.
Character: Bright and fruit-forward with tropical me-
lon, stone fruit, and exotic lychee aromatics over gent-
ly smoked agave. The palate combines ripe sweetness
with lactic tang, mesquite smoke, and dark chocola-
te depth, complemented by a hint of resinous copal
notes. Earthy herbal spices and a hint of cocoa bitter-
ness emerge in the finish. A balanced expression whe-
re fruit and smoke harmonize with elegant bitterness.
